*Banana walnut cake* - A special mention, this recipe was given to me by a friend from her brother who was in his late 80"s. I was told he has passed on a few years back. I now hold his banana cake legacy. Was told like me he makes only banana cake all the time.
Ingredient
- 5 eggs
- 150g sugar ( adjust to taste )
- 3 long cavendish bananas (over ripe & soft )
- 180g corn oil
- 260g four
- 1 tbsp baking powder
- 4 to 6 pieces of walnut
Method
1. Beat egg and sugar in mixer at high speed for about 15 mins (batter will rise to full bowl)
2. Mash the bananas and add to batter, mix for another 5 mins at mid speed
3. Add in corn oil and mix for a mins
4. Pour above batter into mixing bowl with the flour sieved with baking powder and hand fold to mix well. Pour into 12x8 tray.

5. Pan roast 4 pieces of walnut and crushed it to sprinkle over the top of the batter.
6. Bake at 160 C for 60 mins
