Nyonya zhang 娘惹粽子

Ingredients

Part A - rice
- 1.5kg glutinous rice
- 2 tbsp salt
- 2 tbsp pepper
- 2 tbsp lard oil

Part B - blue rice
- 0.5kg glutinous rice
- 2tsp salt
- 2 tsp pepper
- 2 tsp lard oil
- 300ml blue pea flower water (soak rice with it)

- cut pandan leaves into small pieces to wrap in each zhang
- 3 pandan leaves to add to water to boil zhang

Fillings
- 1kg pork belly or chicken meat minced
- 400g lard pork cut
- 100 g mushroom diced
- 250g ~ 400g candied melon
- 70g garlic
- 150g shallot or red onion diced
- 3 tbsp sugar
- 2 tbsp pepper
- 2 tbsp dark sauce
- 200 ml water (mushroom water)
- 30g coriander powder

Rice is pre-soak 3 hours before marinating
Zhang is to cook in pressure cooker for 50 mins

60 bamboo leaves to make 20 large or 30 small zhangs for this recipe
