Creamy coconut Indonesian fish curry
Ingredient
Fish - mackerel 500g
- tumeric
- shallot
- garlic
- chilli paste
- galanga
- lemongrass
(blend or pound into paste)
- Potato
- cabbage
- brinjal
- carrot
(add whatever you prefer)
- 200 ml coconut cream
Fry fish with ginger and put aside
Fry the blended paste to fragrant and add in fish to cook, then add water to let it simmer then add all the vegetables and simmer another 5 mins.
Add in the coconut cream and simmer for another 10 mins or so and serve with rice.
Can add kaffir leaves, lime to enhance taste.
