Cantonese mung bean zhang 广东咸肉粽子

Ingredients:

  • 60 bamboo leaves - 20 large or 30 small depend on size prefered
  • 1 kg glutinous rice
  • 600 gm peeled mung beans

Fillings:
-350 gm pork belly, no skin
-8 shiitake mushrooms, soaked and shredded
-10 salted egg yolks (store-bought or homemade), halved
- Chinese sausage
- chest nuts

Marinade for pork belly:

  • 2 tsp five spice powder
  • 1½ tsp salt
  • 1 tsp light soy sauce
  • ½ tsp sugar
  • white pepper, to taste
  • a dash Shaoxing wine

Seasonings for shiitake mushrooms:

  • ½ tsp salt
  • ½ tsp sugar

Seasonings for glutinous rice:

  • 1½ Tbsp salt
  • 2 tsp sugar
  • 1½ Tbsp oil

Seasonings for mung beans:

  • 3 tsp salt
  • 2 tsp sugar
  • 2 tsp oil
