Teochew Or Nee (Yam paste)

Ingredients
- 500g yam                                                         
- 120g sugar (adjust to your liking)                  
- 20g shalots                                                      
- 3 pandan leaves
- 60g gingko nuts (boil with 2 pandan leaves & 1tbsp sugar )       
- 150g pumpkin
- 12 tbsp lard or oil
- 1/4 cup water
                                                        
Method
- Steam yam for about 25 mins to cook, and mash yam to pass through a siever
- Cut pumpkin to slices and marinate with 30g sugar and steam till cooked
- Fry shallots and pandan leaves till fragrant and throw away the shallots and pandan
- Add in yam paste to fry add in 120g sugar and water till well combined
- Arrange pumpkin in bowl, add in gingko nuts and pour in cooked pumpkin paste
- Cover with cling plastic and steam for about 30 mins
- Once down overturn bowl into a plate and enjoy ( coconut cream topping optional)
