娘惹棕 Nonya Rice Dumpling
Ingredients
- 2kg glutinous rice (soak for at least 3 hours)
- 2 tbsp. salt
- 3 tbsp. pepper
- 3 tbsp. lard oil
Portion 1/4 of above and add blue pea flower water to colour part of rice (optional)
Fillings
- 1kg pork belly minced or minced meat
- 400g pork lard to extract oil ( crumbs to be added later to cook meat)
- 100 g sliced mushroom chopped into small bits
- 500g candied melon
- 70g garlic chopped
- 150g shallots sliced
- 2 tbsp. salt
- 3 tbsp. ginger powder
- 2 tbsp. pepper
- 2 tbsp. dark sauce
- 200ml water (may not nee if too wet)
- 30g coriander powder
Fry the meat with shallots and garlic and rest of the condiments
added and simmer for a while.
This recipe yield 60 small dumplings.
