Teochew Orh-Nee (Yam Paste) 潮州芋泥

 
Ingredients
  • 500 g peeled yam – cut into cubes and steam for 15 mins
  • 3 to 4 stalk pandan leaves
  • 80  gingko nuts
  • 200 ml water + 2 tbsp sugar (for gingko nut)
  • 500 ml water (for syrup)
  • 140 g rock sugar (or more if you prefer sweeter)
Instructions
  1. Boil gingko nuts with 1 stalk of pandan leaf and sugar for 20 mins, until softened.
  2. Steam yam with 2 stalks of pandan leaves for 20 until softened.

(Steam above 1 & 2 together to save time)

- When the yam is done, remove pandan leaves and blender add in 3 tbsp raw sugar

- Remove from blender and pan cook until thicken

- To serve, add ginhko nut over it and add coconut cream (optional) and mashed pumpkin
