Fluffy Japanese pancake

Ingredrient (for 6 pieces)
  • 2 large eggs 
  • Tbsp whole milk
  • tsp pure vanilla extract (optional)
  • 1/2 cup cake flour (can also use normal flour half cup remove one tbsp and add 1 tbsp corn flour .)
  • tsp baking powder
  • Tbsp sugar
  • 1 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.) (for greasing the pan)
A
- separate egg u=yok and white
- whisk egg yolk and milk then add in flour mix
B
- beat egg white to stiff meringue with sugar
- Add A and B together and mix well into batter

You can then pan fry 2 spoonful per piece and add in egg mayonnaise fillings or any feeling of choice in between.
