Claypot rice
2 whole chicken thighs, or pork ribs
4 dried shiitake mushrooms1 shallot
- 2 cloves garlic
1 cm ginger
1/4 cup dried shrimp (optional)
2 cups rice
Mixed Sauce
1 tbsp sesame oil
2 tbsp light soy sauce
2 tbsp dark soy sauce
2 1/2 cup water
1 spring onion
1. Marinated meat overnight
2. Cook rice in claypot to 80% cook, about 10 minutes
3. Add mushroom, meat and sausage and cook further for another 10 mins
4. Add in the mixed sauce and simmer for another 5 mins
Garnish with spring onion and serve
