Michelin soy sauce chicken noodle
Ingredients
- 800g chicken
- Dark sauce 1 cup
- Light sauce 1/2 cup
- sesame oil 1 tbsp.
- Chinese rice wine 1 tbsp.
- Black vinegar 1 tbsp.
- cooking oil - 2 tbsp.
- Brown sugar
- star anise
- Cloves
- Cinnamon
- white pepper
- 3 garlic cloves
- Ginger
- Spring onion
Pan fry Star Anise to White pepper to fragrant and set aside (aromatics).
Cook brown sugar with oil to caramel and add ginger and garlic to fry and add in chicken to flip in it and simmer adding in the sauces and rest of the aromatics. Add water to cover the chicken and simmer for 30 mins.
Once cooked, bring out the chicken and apply sesame oil over it and let it cool for about 15 mins to serve.
Boil part of sauce and add in corn flour to thicken as sauce over the chicken.
