Banh-mi
Ingredients (for 6 loaves)
- 1.5 tsp active dry yeast
- 180ml (3/4 cup) lukewarm water
- 250g all-purpose flour
- 1 tsp salt
- 1 tbsp sugar (optional)
Night before year water and half the amount of flour to let it rise overnight then morning add the other half and knead, rest 1 hour, divide into number of loaf slice and let it rise another hour.
Baked 230 C with spray and hot bath 10 mins X 2
Crusty on the outside soft on the inside, way to do it is to have a bowl of water in oven preheat oven for 5 mins, mist spray the oven and bread dough and start baking in between interval 8 mins spray mist of water into oven and close for baking until ready ,the bread should be crusty.
Chicken to be marinated with light soy sauce, oyster sauce, hoisin sauce, sesame oil and pan fry to be filled into the banh mi with lettuce, Chinese celery, cucumber, tomato, pickled carrot & raddish.
