Japanese Curry Roux
Ingredients
- 42g butter
- 4 tbsp all purpose flour
- 1tbsp garam masala
- 1 tbsp curry powder (I use fish curry powder)
- 1/2 tsp cayane pepper (optional for spicy taste or perhaps just chilli powder)
In a sauce pan heat up the butter put in garlic and yellow onion and fry to fragrant and add in chicken to fry for another 3 mins, add in vegetables of your choice and fry adding water to stir fry. About 4 cups of water ( above roux may have to double in amount ).
Add salt and sugar to simmer for another 2 mins and ready to serve.
