Pork trotter

Ingredients
-1.5kg trotter (front paw)
 (boil trotter in hot water with ginger to rid of fats and smell)
- Ginger ~ 5cm length
- 3 Star arise
- 1 cinnamon stick
- 6 clove garlic
- 2 bay leaf
- 1 & 1/2  tbsp rock sugar
- 3 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 2 tbsp rice wine
- 1 tsp salt


Wash boiled trotter and drip dry, fry rock sugar is 2 tbsp oil until dissolved and add in trotter to stir fry. Add rest of ingredients and stir fry for 5 mins, add 3 cups of water or more until all meat in immersed in water.


Simmer and add salt and sugar and adjust to taste, Simmer in low flame for 1 & 1/2 hr.


Alternatively use pressure cooker for quicker cook and softer meat skin.
