Ang Ku Kueh


Ingredients
Dough
- 200g sweet potato (boiled and mashed)
- 200g glutinous rice flour
- 40g sugar
- 2 tbsp oil
- 80g sweet potato water or water
- Colouring if needed ( sweet potato can be yellow or orange, natural)


Filling
- 250g split green beans
- 120g sugar
- 50g coconut milk
- pinch of salt
- Pandan leaves
Soak beans for 2 hr and steam for about 20 mins to soft and blend in blender
Add in sugar and coconut milk and cook in pan until properly mixed


This recipe makes about 32 pieces of small size
- 18g dough
- 16g filling
(each kueh)


Steam for 8 to 10 mins, opening cover every 2 mins
Once done, brush with oil
